April Fool's Day Dinner

Ingredients
  

Meatloaf and Mashed Potato "Cupcakes"

  • 1 lb ground beef
  • 2 carrots grated
  • 1 yellow onion grated
  • 2 eggs
  • ¼ cup barbecue sauce
  • 1 cup breadcrumbs
  • 1 cup grated parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon seasoned salt
  • 1 tsp Montreal Steak Seasoning optional
  • ½ teaspoon pepper
  • 1 package Instant mashed potatoes

Instructions
 

  • Preheat oven to 350 and line muffin tin with cupcake liners.
  • In a large bowl, mix together all ingredients, using your hands.
  • Form balls of about 3/4 c and pat down into muffin liners.
  • Bake for 25-30 minutes, or until cooked through
  • Prepare instant mashed potatoes according to package directions. Stir in food coloring of choice and allow to cool slightly.
  • Fill a piping bag with the mashed potatoes and pipe onto the meatloaf.

JELLO "JUICE"

  • Prepare jello according to package instructions. Pour into clear glasses. Use a spoon to skim off any bubbles. Insert a straw and let set in the fridge.

POUND CAKE "GRILLED CHEESE"

  • Mix store bought frosting with orange food dye.
  • Slice a loaf of pound cake or loaf of angel food cake into 1/2 inch slices. Spread one slice with orange frosting and top with another slice.
  • Melt butter in a pan, and cook each side of the "sandwich" until golden on each side.
