A graham cracker cookie layer sandwiches melty chocolate and gooey marshmallow for a hand held s’more that’s out-of-this-world delicious!
I have waxed poetic about my love of s’mores before. These S’mores Cookies are just the start of many s’mores themed recipes I adore. I could probably start an entirely separate blog, devoted fully to my love and obsession with all things graham cracker, marshmallow, and chocolate.
But for now, I shall just continue posting all of my favorite S’mores goodies every time I have occasion to make one.
And these babies. Oh boy. Let me just list a few occasions for which these would be absolutely perfect:
- A barbecue
- Camp out if you can’t light a fire
- Birthday party
- Pot luck party
- Special dessert
- It’s the weekend
- You did all of the laundry
- You made an annoying phone call
- You assembled IKEA furniture without using any swear words
- You assembled IKEA furniture and used a lot of swear words
Basically, what I’m saying is that you need to make them. I know I am prone to hyperbole, but I just need you to to believe me when I tell you that these are one of my most favorite desserts. I love ’em. They are great cooled, and they are also great warm and gooey. And if you put a scoop of ice cream on top, I won’t tell.
S'mores Bars
Ingredients
- 1/2 cup butter softener
- 1/4 cup brown sugar
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/3 cups all purpose flour
- 3/4 cup graham cracker crumbs about 8 crackers
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 king-sized Hershey's milk chocolate bars
- 1 7.5 oz jar marshmallow fluff
Instructions
- Preheat oven to 350°Grease an 8-inch square baking pan.
- In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. Add flour, graham crackers crumbs, baking powder, and salt, and mix until combined.
- Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. The 2 bars should fit side by side, but if not; break to fit in one layer. Spread marshmallow fluff over chocolate bars.
- Place remaining dough in a single layer on top of the fluff. Flatten pieces of dough between your hands and make little discs. Lay these discs over the marshmallow fluff, trying to cover the surface evenly. It's okay if a little bit of marshmallow is peeking through. You could also roll the dough between 2 sheets of parchment paper and place over the marshmallow.
- Bake for 25 to 35 minutes, until lightly browned. Cool completely before cutting into bars.
