Pizza Lasagna

October 28, 2019 by amyreeves24@gmail.com Leave a Comment

Pizza Lasagna- like two classic family favorite dinners had a delicious baby! Layers of pizza sauce, loaded with your favorite pizza toppings and sausage, between pasta, pepperoni, and cheese! The best lasagna is the kind that tastes like pizza!

We’re friends, right? Can I tell you something. Come close, let me whisper it.

I don’t like lasagna. There, I said it. I just don’t. I hate ricotta cheese. So most stuffed shells are out too. I only like ziti when it’s made my way. Pasta just doesn’t usually really call to me

But take your basic, ricotta laden lasagna and give it a pizza makeover? I am here for it, baby. Lasagna, minus ricotta, and plus pepperoni and other pizza flavors= Delicious.

Pizza Lasagna

This lasagna is totally customizable. You can add whatever vegetables your family enjoys to the sauce. My son and I love bell peppers, so I loaded it up with them, but skip them if you aren’t a fan! I LOVE black olives and really wanted to add some, but certain members of my family protested. Whatever pizza toppings your family is in to, put them in to this lasagna.

I love no boil noodles. I am very averse to dirtying more dishes than necessary. All the dirty dishes this lasagna will cost you is 1 pot for the sauce and 1 baking dish. Not too shabby for a delicious dinner!

When you use no boil noodles, the layering of the sauce is important. It’s also important that you have a fairly wet sauce, so the noodles can absorb some of the moisture without drying out the whole dish.

Start by spreading about one cup of sauce on the bottom of a greased 9×13 pan.

Layer noodles over the sauce in one layer. Break them to fit, if you need to.

Cover those noodles with 1/3 of the sauce.

Layer on your pepperonis, baby. Man, I love pepperonis.

Then spread about 1 cup of cheese over that.

Finish layering in this order: Layer of noodles, 1/3 of sauce, pepperonis, 1 cup of mozzarella cheese, noodles, remaining sauce, remaining cheese.

Sprinkle some parmesan cheese on top for funsies. Wrap that puppy up in some foil and pop in the oven! After 30 minutes, remove the foil and bake for 15 more minutes, or until hot and bubbly.

Devour! We love this! It is very rare that dinner is not met with groans and protests, and this Pizza Lasagna is always a hit!

Ingredients Method Notes

Ingredients

  • 16 oz Italian Sausage
  • 1/2 red onion diced
  • 2 bell peppers diced
  • 8 oz mushrooms sliced
  • 2 15 oz cans tomato sauce
  • 12 oz can tomato paste
  • 1.5 tbsp Italian seasoning
  • 1 tbsp oregano
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • 1/2 tbsp garlic powder
  • 1/2 tsp pepper
  • 1 c water
  • 1 box no-boil lasagna noodles
  • 1 bag pepperonis
  • 2 1/2 c shredded mozzarella cheese
  • 1/2 c shredded parmesan cheese

Method

  1. Preheat oven to 350.
  2. In a deep skillet, brown Italian sausage (removing casings if necessary). Add onion, peppers, and mushrooms and cook until soft. Add tomato sauce and paste, water, and all seasonings. Simmer for 5 minutes.
  3. Prepare a deep 9×13 pan with cooking spray. Spread 1 cup of sauce on the bottom. Lay noodles in one layer, breaking noodles to fit if necessary. Spread 1/3 of the sauce on top of the noodles. Layer 1/2 of the pepperonis on top. Sprinkle 1 cup of mozzarella cheese over pepperonis. Repeat layer: Noodles, 1/3 sauce, 1/2 pepperoni, 1 cup cheese. Add one more layer of noodles, topped with remaining 1/3 of sauce. Top with remaining mozzarella cheese and parmesan cheese.
  4. Cover dish in foil. Bake for 30 minutes. Remove foil and bake for 15 more minutes.

Notes

Feel free to add or omit vegetables to your tastes! You could add black olives, artichoke hearts, spinach… Whatever your family will enjoy. I will caution that the bell pepper flavor is fairly strong, so if your family doesn’t enjoy peppers, skip them!
