Nachos are already delicious- What can be bad about tortilla chips with melted cheese? I guess unless you’re Andy Dwyer and make your nachos without melting the cheese.
But something has always been just missing for me. I want ’em to be gooey and loaded. When my friend Bailey posted about these nachos, I knew I need to try them.
Bailey told me that these nachos originated when her Dad worked at a restaurant. After the shifts were over, and all of the employees were hanging out and drinking, he would whip up these nachos for the drunk and hungry gang. He called them “slurry nachos” and they were inspired by the restaurant leftovers.
It seems almost silly to write a recipe for this, but I had never heard of something like this, and I think the world needs to know about this. It’s football season, so it’s time for all of the appetizers and football food. These are a perfect addition to any football snack spread. They’ll disappear in a flash.
This is another recipe you can customize to your tastes. Try ground beef instead of chicken! Maybe stir in some refried beans? Top with tomatoes, guacamole, salsa, green onions, cilantro… Whatever strikes your fancy.
But can I please give a voice to the cause for grating your own cheese? It melts SO much better than the bagged shredded kind, and it’s so worth the small amount of effort.

Gooey Nachos
Ingredients
- 1 bag tortilla chips
- 1 (8 oz) block cream cheese
- 1 can black beans drained and rinsed
- 1 c cooked chicken chopped or shredded
- 1 jar of salsa
- 2 c shredded cheddar cheese
- 1/2 c sliced jalapeños
- Sour cream Avocado, salsa for serving
Instructions
- In a saucepan, combine cream cheese, black beans, chicken and salsa until fully combined and heated through.
- On a baking sheet, spread chips into a single layer. Spoon cream cheese mixture over chips. Cover with shredded cheese and sliced jalapeños. Broil until cheese is melted.
- Serve with sour cream, avocado, and salsa.
