Sugar cookies don’t usually do it for me. A plain sugar cookie, like the kind from the grocery store? That’s a hard pass. A homemade frosted sugar cookie? Still not my most favorite, but I’ll definitely eat 1 or 10. But these chewy, buttery, funfetti cookies? Gimme.
There is a cookie company here in Colorado Springs called Sasquatch Cookies. They will deliver warm, amazing cookies right to your doorstep. And the piéce de résistance? You can order them to be delivered to a friend, via Sasquatch delivery.
I first learned of this amazing company when my doorbell rang at about 8 p.m. one night. I answered the door and jumped out of my skin when this greeted me on the other side:
After re-starting my heart, I saw that this terrifying creature was holding a box out towards me. I stared in confusion as Big Foot gestured for me to take the box. Afraid that my noncompliance would agitate the creature, I took the box. Sasquatch offered a cheery wave goodbye and disappeared into the night. I opened the box to find an assortment of enormous and delicious cookies. This terrifying creature brought this unexpected, hilarious, and delicious surprise during a really really hard time for me, as a gift from a wonderful friend. It was pure happiness, delivered by a hairy monster.
Every flavor was delicious, but the rainbow sprinkle cookies were especially incredible. I have thought of them endlessly since, and went on a quest to create a similar cookie at home. These kinds of cookies are often made with cake mix, but something about cake mix cookies always tastes just a little artificial to me, so I wanted to find a cookie that was buttery and vanilla-y, without a cake mix.
These cookies satisfy my Sasquatch cookie cravings, and save me the cardiac arrest of opening my door to Sasquatch. I can practically feel the combination of terror, confusion, delight, and deliciousness when I eat these little sugar cookies that remind me of that hilarious and awesome night. I love friends. And I love these cookies.
Crispy on the edges, chewy and buttery, and cute as a button with these rainbow sprinkles. And SUPER easy! One bowl, a spoon and a whisk, and oh so tasty.
To up the cute-ness factor, you can dip the cookie dough balls into more sprinkles before baking. They’re cute either way!
Cookies should not snap when you bend them. They should bend and reveal their crackly, buttery, chewy goodness. This is just a fact. Crunchy cookies have no place in my life.
Funfetti Butter Cookies
Ingredients
- 1 cup butter melted and cooled
- 1 2/3 cup white sugar
- 2 eggs
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1/2 c sprinkles plus extra for topping if desired
Instructions
- Melt butter in a large, microwave safe bowl in 15-second increments (stirring between) until butter is melted. Make sure butter is not too hot- my tip is stop microwaving when the butter is mostly melted, and stir until it is fully melted but not hot.
- Stir in sugar.
- Add eggs and vanilla extract. Stir well.
- On top of the wet ingredients. Add flour, cornstarch, baking powder and soda, and salt. Whisk dry ingredients together and then stir to combine with wet ingredients.
- Stir in sprinkles. Refrigerate the dough for at least 30 minutes.
- Preheat oven to 350F and prepare cookie sheets with cooking spray or parchment paper.
- Use a cookie scoop to form dough balls of about 2 tbsp. Press tops of balls into extra sprinkles if desired.
- Place at least 2 inches apart on cookie sheet and bake on 350F for 12 minutes- don't over bake!
- Allow cookies to cool for 5 minutes on cookie sheet before transferring to wire rack to cool completely.
